Ingredients:  

Main Ingredients

  • 2 cups Shredded Carnitas
  • 1 cup Cooked Rice
  • 1 cup Black Beans drained and rinsed
  • 1 cup Corn frozen or canned
  • 1 cup Shredded Cheese cheddar or Mexican blend
  • 1 cup Salsa
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • to taste Salt and Pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine shredded carnitas, cooked rice, black beans, corn, shredded cheese, salsa, cumin, chili powder, salt, and pepper.
  • Transfer the mixture to a greased baking dish and spread it out evenly.
  • Bake in the preheated oven for 30-40 minutes, until the casserole is heated through and the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

This casserole can be made ahead of time and refrigerated until ready to bake.
