Salt and Pepper
Instructions:
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine shredded carnitas, cooked rice, black beans, corn, shredded cheese, salsa, cumin, chili powder, salt, and pepper.
Transfer the mixture to a greased baking dish and spread it out evenly.
Bake in the preheated oven for 30-40 minutes, until the casserole is heated through and the cheese is melted and bubbly.
Let it cool for a few minutes before serving. Enjoy!

This casserole can be made ahead of time and refrigerated until ready to bake.
