Ingredients:

  • 1 lb Ground Beef
  • 1 cup Rice cooked
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn frozen or canned
  • 1 cup Salsa
  • 1 cup Cheddar Cheese shredded
  • 1 packet Taco Seasoning

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add taco seasoning to the beef and stir to combine.
  • In a large mixing bowl, combine cooked rice, black beans, corn, salsa, and seasoned beef.
  • Transfer the mixture to a baking dish and spread evenly.
  • Sprinkle shredded cheddar cheese on top.
  • Bake in preheated oven for 20-25 minutes, until cheese is melted and bubbly.
  • Let cool for a few minutes before serving. Enjoy!

You can customize this casserole with your favorite toppings like sour cream, guacamole, or chopped cilantro.
