Ingredients:

  • 1 lb Ground Beef
  • 1 can Enchilada Sauce (10 oz)
  • 1 can Diced Tomatoes with Green Chilies (10 oz)
  • 1 cup Shredded Cheddar Cheese
  • 1 can Pillsbury Grands Biscuits (16 oz)

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a skillet, cook the ground beef until browned. Drain the fat.
  • In a mixing bowl, combine the cooked beef, enchilada sauce, and diced tomatoes with green chilies.
  • Cut the biscuits into quarters and stir them into the beef mixture.
  • Pour the mixture into a baking dish and top with shredded cheddar cheese.
  • Bake for 25-30 minutes until the biscuits are cooked through and the cheese is bubbly.

Notes:

Serve with a side of sour cream and chopped cilantro if desired.
