Instructions:
Preheat your oven to 350°F (175°C).
In a skillet, cook the ground beef until browned. Drain the fat.
In a mixing bowl, combine the cooked beef, enchilada sauce, and diced tomatoes with green chilies.
Cut the biscuits into quarters and stir them into the beef mixture.
Pour the mixture into a baking dish and top with shredded cheddar cheese.
Bake for 25-30 minutes until the biscuits are cooked through and the cheese is bubbly.
Notes:
Serve with a side of sour cream and chopped cilantro if desired.
