Instructions:
Preheat oven to 375°F (190°C).
In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add chopped onion, bell pepper, and garlic to the skillet. Cook until vegetables are tender.
Stir in fajita seasoning and mix well.
In a large bowl, combine cooked beef mixture, cooked rice, sour cream, salsa, and 1 cup of shredded cheese.
Transfer mixture to a baking dish and top with remaining shredded cheese.
Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
Let cool for a few minutes before serving.
Notes:
Feel free to add your favorite toppings like avocado, cilantro, or jalapeños.
