Ingredients:

  • 1 lb Ground Beef
  • 1 cup Chopped Onion
  • 1 can Diced Tomatoes (14.5 oz)
  • 1 cup Frozen Corn
  • 1 cup Velveeta Cheese cubed
  • 2 cups Cooked Elbow Macaroni
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is tender. Drain any excess fat.
  • Add the diced tomatoes (with juice), frozen corn, salt, and black pepper to the skillet. Stir to combine and let it simmer for about 5 minutes.
  • Stir in the cubed Velveeta cheese until melted and well combined.
  • Add the cooked elbow macaroni to the skillet and mix well.
  • Transfer the mixture to a baking dish and bake in the preheated oven for 20-25 minutes, or until the casserole is bubbly and heated through.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

This casserole is a great make-ahead meal. You can prepare it up to the baking step, refrigerate, and then bake when ready to serve.
