Instructions:
Preheat your oven to 350°F (175°C).
In a skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is tender. Drain any excess fat.
Add the diced tomatoes (with juice), frozen corn, salt, and black pepper to the skillet. Stir to combine and let it simmer for about 5 minutes.
Stir in the cubed Velveeta cheese until melted and well combined.
Add the cooked elbow macaroni to the skillet and mix well.
Transfer the mixture to a baking dish and bake in the preheated oven for 20-25 minutes, or until the casserole is bubbly and heated through.
Let it cool for a few minutes before serving. Enjoy!
Notes:
This casserole is a great make-ahead meal. You can prepare it up to the baking step, refrigerate, and then bake when ready to serve.
