Ingredients:  

Main Ingredients

  • 1 lb Ground beef
  • 1 cup Onion, chopped
  • 1 cup Bell pepper, chopped
  • 2 cloves Garlic, minced
  • 1 can Black beans, drained and rinsed 15 oz can
  • 1 can Corn, drained 15 oz can
  • 1 can Diced tomatoes 15 oz can
  • 1 cup Salsa
  • 2 cups Shredded cheese Cheddar or Mexican blend
  • 8 large Flour tortillas

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add chopped onion, bell pepper, and minced garlic to the skillet. Cook until vegetables are tender.
  • Stir in black beans, corn, diced tomatoes, and salsa. Cook for another 5 minutes.
  • In a baking dish, layer 2 tortillas, followed by a portion of the beef mixture and a sprinkle of cheese. Repeat layers, ending with cheese on top.
  • Bake in preheated oven for 20-25 minutes, until cheese is melted and bubbly.
  • Let cool for a few minutes before slicing and serving.

Notes:

Feel free to add your favorite toppings like sour cream, guacamole, or fresh cilantro.
