Instructions:
Preheat oven to 375°F (190°C).
In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add chopped onion, bell pepper, and minced garlic to the skillet. Cook until vegetables are tender.
Stir in black beans, corn, diced tomatoes, and salsa. Cook for another 5 minutes.
In a baking dish, layer 2 tortillas, followed by a portion of the beef mixture and a sprinkle of cheese. Repeat layers, ending with cheese on top.
Bake in preheated oven for 20-25 minutes, until cheese is melted and bubbly.
Let cool for a few minutes before slicing and serving.
Notes:
Feel free to add your favorite toppings like sour cream, guacamole, or fresh cilantro.
