Ingredients:  

Main Ingredients

  • 4 cups Matzo farfel
  • 1 cup Chicken broth
  • 2 cups Cooked chicken, shredded
  • 1 cup Carrots, diced
  • 1 cup Celery, diced
  • 1 cup Onion, diced
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the matzo farfel and chicken broth. Let it sit for 5 minutes to absorb the liquid.
  • In a skillet, heat the olive oil over medium heat. Add the diced carrots, celery, and onion. Sauté until the vegetables are tender, about 10 minutes.
  • Add the sautéed vegetables, shredded chicken, salt, and black pepper to the matzo farfel mixture. Stir well to combine.
  • Transfer the mixture to a greased baking dish. Bake in the preheated oven for 45 minutes, or until the top is golden brown and crispy.
  • Let the casserole cool for a few minutes before serving. Enjoy!

Notes:

This casserole is a great way to use up leftover chicken and makes for a hearty Passover meal.
