Instructions:
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the matzo farfel and chicken broth. Let it sit for 5 minutes to absorb the liquid.
In a skillet, heat the olive oil over medium heat. Add the diced carrots, celery, and onion. Sauté until the vegetables are tender, about 10 minutes.
Add the sautéed vegetables, shredded chicken, salt, and black pepper to the matzo farfel mixture. Stir well to combine.
Transfer the mixture to a greased baking dish. Bake in the preheated oven for 45 minutes, or until the top is golden brown and crispy.
Let the casserole cool for a few minutes before serving. Enjoy!
Notes:
This casserole is a great way to use up leftover chicken and makes for a hearty Passover meal.
