Cook rice noodles according to package instructions. Drain and set aside.
In a large mixing bowl, combine cooked noodles, vegetable oil, bean sprouts, garlic, fish sauce, soy sauce, lime juice, chicken, eggs, green onions, and brown sugar. Mix well.
Transfer mixture to a greased baking dish. Sprinkle crushed peanuts on top.
Bake for 25-30 minutes, until the top is golden and the casserole is heated through.
Let cool for a few minutes before serving. Enjoy!

Feel free to add more veggies or substitute tofu for chicken to make it vegetarian.
