Ingredients:  

Main Ingredients

  • 8 oz rice noodles
  • 2 tbsp vegetable oil
  • 1 cup bean sprouts
  • 2 cloves garlic, minced
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 cup chicken breast, cooked and shredded
  • 2 eggs beaten
  • 1/4 cup green onions, chopped
  • 1/4 cup crushed peanuts
  • 1 tbsp brown sugar

Instructions: 

  • Preheat oven to 375°F (190°C).
  • Cook rice noodles according to package instructions. Drain and set aside.
  • In a large mixing bowl, combine cooked noodles, vegetable oil, bean sprouts, garlic, fish sauce, soy sauce, lime juice, chicken, eggs, green onions, and brown sugar. Mix well.
  • Transfer mixture to a greased baking dish. Sprinkle crushed peanuts on top.
  • Bake for 25-30 minutes, until the top is golden and the casserole is heated through.
  • Let cool for a few minutes before serving. Enjoy!

Notes:

Feel free to add more veggies or substitute tofu for chicken to make it vegetarian.
