Instructions:
Preheat your oven to 375°F (190°C).
In a skillet, cook the ground pork over medium heat until browned. Drain any excess fat.
Add the chopped onions and minced garlic to the skillet. Cook until the onions are translucent.
Stir in the diced tomatoes, cooked rice, salt, and pepper. Mix well.
Transfer the mixture to a baking dish. Top with shredded cheddar cheese.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Let it cool for a few minutes before serving. Enjoy!
Notes:
This casserole can be made ahead and refrigerated. Just bake it when you're ready to eat.
