Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion, bell pepper, and garlic. Sauté until softened.
3. Stir in the chopped tomato, thyme, paprika, salt, and black pepper. Cook for another 2 minutes.
4. Pour in the coconut milk and fish stock. Bring to a simmer.
5. Add the fish chunks and lime juice. Simmer for about 10-15 minutes, or until the fish is cooked through.
6. Garnish with chopped cilantro before serving.
Notes:
Serve with rice or crusty bread.
