Ingredients:  

Main Ingredients

  • 1 lb White fish fillets cut into chunks
  • 1 cup Coconut milk
  • 2 cups Fish stock
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 medium Bell pepper chopped
  • 1 medium Tomato chopped
  • 1 tsp Thyme dried
  • 1 tsp Paprika
  • 1 tsp Salt or to taste
  • 1/2 tsp Black pepper or to taste
  • 2 tbsp Olive oil
  • 1 tbsp Lime juice freshly squeezed
  • 1 handful Cilantro chopped, for garnish

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onion, bell pepper, and garlic. Sauté until softened.
  • 3. Stir in the chopped tomato, thyme, paprika, salt, and black pepper. Cook for another 2 minutes.
  • 4. Pour in the coconut milk and fish stock. Bring to a simmer.
  • 5. Add the fish chunks and lime juice. Simmer for about 10-15 minutes, or until the fish is cooked through.
  • 6. Garnish with chopped cilantro before serving.

Notes:

Serve with rice or crusty bread.
