Ingredients:  

Main Ingredients

  • 1 lb cod fillets cut into chunks
  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 cup tomato sauce
  • 2 cups fish stock
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 bay leaf
  • 1/4 cup chopped parsley for garnish

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and garlic, cook until softened.
  • Add red bell pepper and cook for another 5 minutes.
  • Stir in tomato sauce, fish stock, smoked paprika, salt, black pepper, and bay leaf. Bring to a simmer.
  • Add cod chunks and simmer for 10-15 minutes, until the fish is cooked through.
  • Remove bay leaf, garnish with chopped parsley, and serve hot.

Notes:

Serve with crusty bread for a complete meal.
