Ingredients:

Lamb shoulder, cut into chunks

Beef broth

Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add lamb chunks and brown on all sides.
3. Add onions and garlic, cook until softened.
4. Stir in tomato paste, salt, and pepper.
5. Pour in beef broth, add thyme and rosemary. Bring to a boil.
6. Reduce heat, cover, and simmer for 1.5 hours.
7. Add carrots and potatoes. Cook for another 30 minutes or until vegetables are tender.
Notes:
Serve hot with crusty bread.
