Ingredients:  

Main Ingredients

  • 2 lbs Lamb shoulder, cut into chunks
  • 4 cups Beef broth
  • 1 cup Carrots, sliced
  • 1 cup Potatoes, diced
  • 1 cup Onions, chopped
  • 2 cloves Garlic, minced
  • 2 tbsp Tomato paste
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Olive oil
  • 1 tsp Thyme
  • 1 tsp Rosemary

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add lamb chunks and brown on all sides.
  • 3. Add onions and garlic, cook until softened.
  • 4. Stir in tomato paste, salt, and pepper.
  • 5. Pour in beef broth, add thyme and rosemary. Bring to a boil.
  • 6. Reduce heat, cover, and simmer for 1.5 hours.
  • 7. Add carrots and potatoes. Cook for another 30 minutes or until vegetables are tender.

Notes:

Serve hot with crusty bread.
