Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 lb beef stew meat cut into cubes
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 2 carrots sliced
  • 2 potatoes diced
  • 2 tbsp tomato paste
  • 1 tsp thyme dried
  • 1 tsp rosemary dried
  • to taste salt and pepper

Instructions: 

  • 1. Heat olive oil in a Dutch oven over medium heat.
  • 2. Add beef stew meat and brown on all sides. Remove and set aside.
  • 3. In the same pot, add chopped onion and cook until translucent.
  • 4. Add minced garlic and cook for another minute.
  • 5. Return beef to the pot and add beef broth, carrots, potatoes, tomato paste, thyme, and rosemary.
  • 6. Bring to a boil, then reduce heat to low and simmer for 2 hours.
  • 7. Season with salt and pepper to taste before serving.

Notes:

Feel free to add other vegetables like peas or green beans.
