beef stew meat
cut into cubes
1
large onion
chopped

cloves
garlic
minced

cups
beef broth

carrots
sliced

potatoes
diced
2
tbsp
tomato paste
1
tsp
thyme
dried
1
tsp
rosemary
dried
to taste
salt and pepper
Instructions:
1. Heat olive oil in a Dutch oven over medium heat.
2. Add beef stew meat and brown on all sides. Remove and set aside.
3. In the same pot, add chopped onion and cook until translucent.
4. Add minced garlic and cook for another minute.
5. Return beef to the pot and add beef broth, carrots, potatoes, tomato paste, thyme, and rosemary.
6. Bring to a boil, then reduce heat to low and simmer for 2 hours.
7. Season with salt and pepper to taste before serving.
Notes:
Feel free to add other vegetables like peas or green beans.
