Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and garlic, and sauté until softened.
3. Stir in the chopped bell peppers and cook for another 5 minutes.
4. Add the cumin, paprika, salt, and black pepper. Stir well to combine.
5. Pour in the vegetable broth and bring to a simmer.
6. Add the cooked black beans and let the stew simmer for 20 minutes, stirring occasionally.
7. Adjust seasoning to taste and serve hot.
Notes:
This stew is perfect for a cozy dinner. Serve with rice or crusty bread.
