Ingredients:  

Main Ingredients

  • 2 cups black beans cooked or canned
  • 1 cup bell peppers chopped
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt or to taste
  • 1 cup vegetable broth
  • 1 teaspoon black pepper freshly ground

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onion and garlic, and sauté until softened.
  • 3. Stir in the chopped bell peppers and cook for another 5 minutes.
  • 4. Add the cumin, paprika, salt, and black pepper. Stir well to combine.
  • 5. Pour in the vegetable broth and bring to a simmer.
  • 6. Add the cooked black beans and let the stew simmer for 20 minutes, stirring occasionally.
  • 7. Adjust seasoning to taste and serve hot.

Notes:

This stew is perfect for a cozy dinner. Serve with rice or crusty bread.
