Ingredients:  

Main Ingredients

  • 4 pieces Lamb neck chops
  • 2 tbsp Olive oil
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 2 cups Beef broth
  • 1 cup Red wine
  • 2 large Carrots sliced
  • 2 stalks Celery chopped
  • 2 tbsp Tomato paste
  • 1 tsp Dried thyme
  • 1 tsp Dried rosemary
  • to taste Salt and pepper

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Season lamb neck chops with salt and pepper, then brown them in the pot. Remove and set aside.
  • Add chopped onion and minced garlic to the pot, sauté until softened.
  • Stir in tomato paste, cook for a minute.
  • Pour in red wine, beef broth, and add thyme and rosemary. Bring to a boil.
  • Return lamb chops to the pot, reduce heat, cover, and simmer for 1.5 hours.
  • Add carrots and celery, cook for another 30 minutes until vegetables are tender.
  • Adjust seasoning with salt and pepper. Serve hot.

Notes:

For a richer flavor, marinate the lamb chops in red wine and herbs overnight.
