Ingredients:  

Main Ingredients

  • 1 lb Pork shoulder cut into chunks
  • 4 Green onions chopped
  • 2 cloves Garlic minced
  • 1 tbsp Thyme fresh
  • 1 cup Chicken broth
  • 1 cup Coconut milk
  • 1 tbsp Allspice ground
  • 1 tsp Salt
  • 1 tsp Black pepper

Instructions: 

  • 1. Heat a large pot over medium heat and add a bit of oil.
  • 2. Add the pork chunks and brown on all sides.
  • 3. Add the chopped green onions, minced garlic, and fresh thyme. Cook for a few minutes until fragrant.
  • 4. Pour in the chicken broth and coconut milk. Stir in the allspice, salt, and black pepper.
  • 5. Bring to a boil, then reduce heat and let it simmer for about 45 minutes, or until the pork is tender.
  • 6. Serve hot with rice or bread.

Notes:

This stew is even better the next day, so consider making it ahead of time.
