Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Add the pork chunks and brown on all sides.
3. Add the chopped green onions, minced garlic, and fresh thyme. Cook for a few minutes until fragrant.
4. Pour in the chicken broth and coconut milk. Stir in the allspice, salt, and black pepper.
5. Bring to a boil, then reduce heat and let it simmer for about 45 minutes, or until the pork is tender.
6. Serve hot with rice or bread.
Notes:
This stew is even better the next day, so consider making it ahead of time.
