white fish fillets, cut into chunks

Instructions:
Heat oil in a large pot over medium heat.
Add chopped onions, garlic, and ginger. Sauté until fragrant.
Add crushed tomatoes and cook for 5 minutes.
Stir in peanut butter and fish stock. Bring to a simmer.
Add fish chunks, salt, and pepper. Cook until fish is done, about 10 minutes.
Stir in chopped spinach and cook for another 2 minutes.
Serve hot.
Notes:
This stew pairs well with rice or bread.
