Ingredients:  

Main Ingredients

  • 2 tbsp vegetable oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 cup crushed tomatoes
  • 1 cup peanut butter
  • 2 cups fish stock
  • 1 lb white fish fillets, cut into chunks
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup spinach, chopped

Instructions: 

  • Heat oil in a large pot over medium heat.
  • Add chopped onions, garlic, and ginger. Sauté until fragrant.
  • Add crushed tomatoes and cook for 5 minutes.
  • Stir in peanut butter and fish stock. Bring to a simmer.
  • Add fish chunks, salt, and pepper. Cook until fish is done, about 10 minutes.
  • Stir in chopped spinach and cook for another 2 minutes.
  • Serve hot.

Notes:

This stew pairs well with rice or bread.
