beef chuck
cut into chunks

onion
chopped

garlic

beef broth

red wine

carrots
sliced

potatoes

tomato paste

olive oil

thyme
dried

rosemary

to taste

black pepper
Instructions:
1. Heat olive oil in a Dutch oven over medium-high heat.
2. Add beef chunks and brown on all sides. Remove and set aside.
3. In the same pot, add onions and cook until softened.
4. Add garlic and cook for another minute.
5. Stir in tomato paste, thyme, and rosemary.
6. Pour in red wine, scraping up any browned bits from the bottom.
7. Return beef to the pot, add beef broth, carrots, and potatoes.
8. Bring to a boil, then reduce heat and simmer for 2 hours.
9. Season with salt and pepper to taste before serving.
