Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 stalks celery, sliced
  • 1 large potato, diced
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • 1 cup frozen peas
  • 1 cup rice cooked
  • Salt and pepper to taste

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic. Sauté until softened.
  • Add carrots, celery, and potato. Cook for about 5 minutes.
  • Stir in diced tomatoes, vegetable broth, thyme, and basil. Bring to a boil.
  • Reduce heat and let it simmer for 30 minutes or until vegetables are tender.
  • Add frozen peas and cooked rice. Cook for another 5 minutes.
  • Season with salt and pepper to taste. Serve hot.

Notes:

Feel free to add any other vegetables you like.
