Ingredients:

Salt and pepper to taste
Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic. Sauté until softened.
Add carrots, celery, and potato. Cook for about 5 minutes.
Stir in diced tomatoes, vegetable broth, thyme, and basil. Bring to a boil.
Reduce heat and let it simmer for 30 minutes or until vegetables are tender.
Add frozen peas and cooked rice. Cook for another 5 minutes.
Season with salt and pepper to taste. Serve hot.
Notes:
Feel free to add any other vegetables you like.
