Ingredients:  

Main Ingredients

  • 1 medium butternut squash, peeled and diced
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • to taste Salt and pepper
  • 2 tbsp olive oil

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and garlic, sauté until translucent.
  • Add diced butternut squash, cook for 5 minutes.
  • Stir in cumin and paprika.
  • Add black beans, diced tomatoes, and vegetable broth.
  • Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Season with salt and pepper to taste.
