Instructions:
1. Heat a large pot over medium heat. Add the sliced sausage and cook until browned.
2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
3. Stir in the dried thyme, soaked black-eyed peas, and chicken broth. Bring to a boil.
4. Reduce the heat to low and let it simmer for about 45 minutes, or until the peas are tender.
5. Season with salt and black pepper to taste. Serve hot.
Notes:
This stew is even better the next day. Store leftovers in the fridge.
