Ingredients:  

Main Ingredients

  • 1 lb Sausage sliced
  • 2 cups Black-eyed peas soaked overnight
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Thyme dried
  • 4 cups Chicken broth
  • 1 tsp Salt to taste
  • 1/2 tsp Black pepper to taste

Instructions: 

  • 1. Heat a large pot over medium heat. Add the sliced sausage and cook until browned.
  • 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • 3. Stir in the dried thyme, soaked black-eyed peas, and chicken broth. Bring to a boil.
  • 4. Reduce the heat to low and let it simmer for about 45 minutes, or until the peas are tender.
  • 5. Season with salt and black pepper to taste. Serve hot.

Notes:

This stew is even better the next day. Store leftovers in the fridge.
