Instructions:
1. Heat the vegetable oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
3. Add the goat meat to the pot and brown on all sides.
4. Stir in the thyme, paprika, salt, and black pepper.
5. Pour in the water and bring to a boil. Reduce the heat to low, cover, and simmer for about 1.5 hours.
6. Add the sliced carrots and diced potatoes. Continue to simmer for another 30 minutes, or until the vegetables are tender.
7. Adjust seasoning if necessary and serve hot.
Notes:
This stew is even better the next day after the flavors have melded together.
