Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Stir in minced garlic and cook for another minute.
Add diced tomatoes, chicken broth, dried oregano, and dried basil. Bring to a simmer.
Add shrimp to the pot and cook until pink and opaque, about 5-7 minutes.
Season with salt and pepper to taste.
Garnish with fresh parsley before serving.
Notes:
Serve with crusty bread or over rice for a complete meal.
