Ingredients:  

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 2 tbsp Olive oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 can Diced tomatoes (14.5 oz)
  • 1 cup Chicken broth
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 1 pinch Salt and pepper to taste
  • 1 tbsp Fresh parsley, chopped for garnish

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until translucent, about 5 minutes.
  • Stir in minced garlic and cook for another minute.
  • Add diced tomatoes, chicken broth, dried oregano, and dried basil. Bring to a simmer.
  • Add shrimp to the pot and cook until pink and opaque, about 5-7 minutes.
  • Season with salt and pepper to taste.
  • Garnish with fresh parsley before serving.

Notes:

Serve with crusty bread or over rice for a complete meal.
