Ingredients:  

Main Ingredients

  • 1 lb chicken cut into pieces
  • 1 cup peanut butter
  • 1 large onion chopped
  • 2 tomatoes chopped
  • 2 cups chicken broth
  • 1 tbsp vegetable oil
  • 2 cloves garlic minced
  • 1 tsp ginger minced
  • 1 tsp cayenne pepper
  • Salt to taste
  • 1 cup spinach chopped

Instructions: 

  • Heat oil in a large pot over medium heat. Add chicken pieces and brown on all sides. Remove chicken and set aside.
  • In the same pot, add onions, garlic, and ginger. Sauté until onions are translucent.
  • Add tomatoes and cook until they break down.
  • Stir in peanut butter and chicken broth. Mix well.
  • Return chicken to the pot. Add cayenne pepper and salt. Simmer for 30 minutes.
  • Add spinach and cook for another 5 minutes.
