Instructions:
Heat oil in a large pot over medium heat. Add chicken pieces and brown on all sides. Remove chicken and set aside.
In the same pot, add onions, garlic, and ginger. Sauté until onions are translucent.
Add tomatoes and cook until they break down.
Stir in peanut butter and chicken broth. Mix well.
Return chicken to the pot. Add cayenne pepper and salt. Simmer for 30 minutes.
Add spinach and cook for another 5 minutes.
