Instructions:
1. Heat the vegetable oil in a large pot over medium heat.
2. Add the chopped onions and minced garlic, and sauté until golden brown.
3. Stir in the tomato paste and cook for about 10 minutes, stirring frequently.
4. Add the chicken pieces and cook until they are browned on all sides.
5. Pour in the chicken broth and bring to a boil.
6. Add the chopped red and green bell peppers, salt, and black pepper.
7. Reduce the heat to low and let the stew simmer for about 45 minutes, or until the chicken is fully cooked and tender.
8. Serve hot with rice or your favorite side dish.
Notes:
This stew can be stored in the refrigerator for up to 3 days.
