Ingredients:  

Main Ingredients

  • 1 kg Chicken thighs cut into pieces
  • 2 tbsp Olive oil
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 2 tsp Cumin
  • 1 tsp Coriander
  • 1 tsp Paprika
  • 1 tsp Turmeric
  • 400 g Canned tomatoes chopped
  • 2 cups Chicken broth
  • 2 Carrots sliced
  • 1 Bell pepper chopped
  • 1 cup Chickpeas cooked
  • to taste Salt and pepper
  • 1/4 cup Fresh cilantro chopped

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until translucent.
  • Add minced garlic and cook for another minute.
  • Add chicken pieces and cook until browned on all sides.
  • Stir in cumin, coriander, paprika, and turmeric.
  • Add chopped tomatoes, chicken broth, carrots, and bell pepper. Bring to a boil.
  • Reduce heat and let simmer for 30 minutes.
  • Add cooked chickpeas and simmer for another 10 minutes.
  • Season with salt and pepper to taste.
  • Garnish with fresh cilantro before serving.

Notes:

This stew pairs well with couscous or crusty bread.
