Ingredients:  

Main Ingredients

  • 2 lbs Beef stew meat cut into chunks
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 tbsp Ginger grated
  • 2 tbsp Soy sauce
  • 1 tbsp Brown sugar
  • 1 tsp Thyme dried
  • 1 tsp Allspice ground
  • 2 cups Beef broth
  • 1 cup Carrots sliced
  • 1 cup Bell peppers chopped
  • 1 tbsp Vegetable oil

Instructions: 

  • Heat the vegetable oil in a large pot over medium heat.
  • Add the beef chunks and brown on all sides. Remove and set aside.
  • In the same pot, add the onion, garlic, and ginger. Sauté until fragrant.
  • Stir in the soy sauce, brown sugar, thyme, and allspice. Cook for another minute.
  • Return the beef to the pot and add the beef broth. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 1 hour.
  • Add the carrots and bell peppers. Cook for an additional 30 minutes, or until the vegetables are tender.
  • Serve hot with rice or your favorite side.

Notes:

This dish is even better the next day after the flavors have melded together.
