Ingredients:  

Main Ingredients

  • 2 cups black-eyed peas
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 tbsp peanut butter
  • 2 cups vegetable broth
  • 2 tbsp vegetable oil
  • 1 tsp smoked paprika
  • 1 tsp cayenne pepper (optional)
  • Salt and pepper to taste

Instructions: 

  • Heat oil in a pot over medium heat. Add onions and garlic, sauté until translucent.
  • Add tomatoes and bell pepper, cook until softened.
  • Stir in tomato paste, peanut butter, smoked paprika, and cayenne pepper.
  • Add black-eyed peas and vegetable broth. Bring to a boil.
  • Reduce heat and simmer for 30-35 minutes, until peas are tender.
  • Season with salt and pepper to taste. Serve hot.

This stew is perfect for a cozy dinner and pairs well with rice or bread.
