Ingredients:  

Main Ingredients

  • 2 lbs Beef chuck cut into chunks
  • 1 cup Guinness beer
  • 2 cups Beef broth
  • 1 cup Carrots sliced
  • 1 cup Celery sliced
  • 1 cup Onions chopped
  • 2 cups Mushrooms sliced
  • 2 tbsp Tomato paste
  • 2 tbsp Flour
  • 2 tbsp Olive oil
  • 2 cloves Garlic minced
  • 1 tsp Thyme dried
  • 1 tsp Salt
  • 1 tsp Black pepper

Instructions: 

  • Heat olive oil in a Dutch oven over medium-high heat. Brown the beef chunks on all sides.
  • Add onions, carrots, celery, and garlic. Cook until softened.
  • Stir in flour and tomato paste. Cook for a couple of minutes.
  • Pour in Guinness beer and beef broth. Add thyme, salt, and pepper. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 1.5 to 2 hours until beef is tender.
  • Add mushrooms and cook for another 30 minutes.

Notes:

Serve with crusty bread.
