Guinness beer

Instructions:
Heat olive oil in a Dutch oven over medium-high heat. Brown the beef chunks on all sides.
Add onions, carrots, celery, and garlic. Cook until softened.
Stir in flour and tomato paste. Cook for a couple of minutes.
Pour in Guinness beer and beef broth. Add thyme, salt, and pepper. Bring to a boil.
Reduce heat to low, cover, and simmer for 1.5 to 2 hours until beef is tender.
Add mushrooms and cook for another 30 minutes.
Notes:
Serve with crusty bread.
