Ingredients:  

Main Ingredients

  • 1 lb Chicken Breast cubed
  • 2 cups Corn Kernels fresh or frozen
  • 1 cup Diced Tomatoes canned
  • 1 cup Chicken Broth
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tbsp Olive Oil
  • 1 tsp Salt or to taste
  • 1 tsp Black Pepper or to taste
  • 1 tsp Paprika
  • 1 tsp Dried Oregano

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add chopped onion and minced garlic, sauté until fragrant.
  • 3. Add cubed chicken breast, cook until browned.
  • 4. Stir in corn kernels, diced tomatoes, and chicken broth.
  • 5. Season with salt, black pepper, paprika, and dried oregano.
  • 6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • 7. Serve hot and enjoy!

Notes:

Feel free to add other vegetables like carrots or potatoes for extra heartiness.
