Ingredients:  

Main Ingredients

  • 1 cup Orzo
  • 2 tbsp Olive Oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 can Diced Tomatoes 14 oz
  • 4 cups Vegetable Broth
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • to taste Salt and Pepper
  • 2 cups Spinach fresh

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until translucent, about 5 minutes.
  • Stir in minced garlic and cook for another minute.
  • Add diced tomatoes, vegetable broth, dried oregano, and dried basil. Bring to a boil.
  • Add orzo and reduce heat to a simmer. Cook until orzo is tender, about 10-12 minutes.
  • Season with salt and pepper to taste.
  • Stir in fresh spinach and cook until wilted, about 2 minutes.
  • Serve hot and enjoy!

Notes:

This stew is great for meal prep and can be stored in the fridge for up to 3 days.
