Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Stir in minced garlic and cook for another minute.
Add diced tomatoes, vegetable broth, dried oregano, and dried basil. Bring to a boil.
Add orzo and reduce heat to a simmer. Cook until orzo is tender, about 10-12 minutes.
Season with salt and pepper to taste.
Stir in fresh spinach and cook until wilted, about 2 minutes.
Serve hot and enjoy!

This stew is great for meal prep and can be stored in the fridge for up to 3 days.
