Ingredients:  

Main Ingredients

  • 1 block Tofu firm, cubed
  • 200 g Mushrooms sliced
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tbsp Soy Sauce
  • 1 tsp Ginger grated
  • 4 cups Vegetable Broth
  • 1 tbsp Olive Oil
  • to taste Salt
  • to taste Black Pepper

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onion and minced garlic. Sauté until fragrant.
  • 3. Add the sliced mushrooms and cook until they release their moisture.
  • 4. Stir in the cubed tofu, soy sauce, and grated ginger.
  • 5. Pour in the vegetable broth and bring to a boil.
  • 6. Reduce the heat and let it simmer for about 20 minutes.
  • 7. Season with salt and black pepper to taste.
  • 8. Serve hot and enjoy!

Notes:

This stew is perfect for a cozy dinner. Feel free to add other vegetables like carrots or bell peppers.
