onion, chopped

garlic, minced

carrots, sliced

potatoes, diced

beef broth

tomato paste

dried thyme

dried rosemary
to taste
salt and pepper
Instructions:
1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
3. Stir in the sliced carrots and diced potatoes. Cook for a few minutes.
4. Pour in the beef broth and add the tomato paste, dried thyme, and dried rosemary. Stir well.
5. Bring the stew to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the vegetables are tender.
6. Season with salt and pepper to taste. Serve hot.
Notes:
This stew is even better the next day. Store leftovers in the fridge and reheat gently.
