Ingredients:  

Main Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 4 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • to taste salt and pepper

Instructions: 

  • 1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  • 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • 3. Stir in the sliced carrots and diced potatoes. Cook for a few minutes.
  • 4. Pour in the beef broth and add the tomato paste, dried thyme, and dried rosemary. Stir well.
  • 5. Bring the stew to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the vegetables are tender.
  • 6. Season with salt and pepper to taste. Serve hot.

Notes:

This stew is even better the next day. Store leftovers in the fridge and reheat gently.
