Ingredients:  

Main Ingredients

  • 500 g Kpomo (cow skin) cleaned and cut into pieces
  • 2 cups Tomato sauce
  • 1 cup Beef broth
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Thyme dried
  • 1 tsp Curry powder
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste
  • 2 tbsp Vegetable oil

Instructions: 

  • 1. Heat the vegetable oil in a pot over medium heat.
  • 2. Add the chopped onions and minced garlic. Sauté until fragrant.
  • 3. Stir in the tomato sauce and cook for about 10 minutes.
  • 4. Add the kpomo pieces, beef broth, thyme, curry powder, salt, and black pepper.
  • 5. Cover and let it simmer for 30 minutes, or until the kpomo is tender.
  • 6. Adjust seasoning if needed. Serve hot with rice or your favorite side.

Notes:

Feel free to add more spices or vegetables to suit your taste.
