Ingredients:  

Main Ingredients

  • 1 pint shucked oysters with their liquor
  • 2 cups whole milk
  • 1 cup heavy cream
  • 4 tablespoons butter
  • 1 small onion, finely chopped
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste
  • 1/4 teaspoon paprika

Instructions: 

  • Melt butter in a large pot over medium heat.
  • Add the chopped onion and cook until translucent.
  • Pour in the milk and heavy cream, stirring occasionally until the mixture is hot but not boiling.
  • Add the oysters and their liquor, then season with salt, pepper, and paprika.
  • Cook until the oysters' edges curl, about 5 minutes. Serve hot.

Notes:

For a richer flavor, you can add a splash of sherry before serving.
