Ingredients:  

Main Ingredients

  • 2 tbsp Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 Carrots, sliced
  • 2 Potatoes, diced
  • 1 Red Bell Pepper, chopped
  • 1 can Diced Tomatoes
  • 4 cups Vegetable Broth
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Chili Powder
  • to taste Salt and Pepper
  • 1 cup Frozen Peas

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic, cook until softened.
  • Add carrots, potatoes, and red bell pepper. Cook for a few minutes.
  • Stir in diced tomatoes and vegetable broth.
  • Add cumin, paprika, chili powder, salt, and pepper. Bring to a boil.
  • Reduce heat and let it simmer for about 30 minutes, until vegetables are tender.
  • Add frozen peas and cook for another 5 minutes.
  • Serve hot.

Notes:

This stew is great with a slice of crusty bread.
