Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic, cook until softened.
Add carrots, potatoes, and red bell pepper. Cook for a few minutes.
Stir in diced tomatoes and vegetable broth.
Add cumin, paprika, chili powder, salt, and pepper. Bring to a boil.
Reduce heat and let it simmer for about 30 minutes, until vegetables are tender.
Add frozen peas and cook for another 5 minutes.
Serve hot.
Notes:
This stew is great with a slice of crusty bread.
