Ingredients:  

Main Ingredients

  • 2 lbs grass-fed beef stew meat cut into 1-inch cubes
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 3 large carrots sliced
  • 4 medium potatoes peeled and cubed
  • 2 tbsp tomato paste
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • to taste salt and pepper

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add the beef and cook until browned on all sides. Remove and set aside.
  • 3. In the same pot, add the onion and garlic. Cook until softened.
  • 4. Stir in the tomato paste, thyme, and rosemary. Cook for another minute.
  • 5. Return the beef to the pot. Add the beef broth, carrots, and potatoes. Bring to a boil.
  • 6. Reduce heat to low, cover, and simmer for 2 hours or until the beef is tender.
  • 7. Season with salt and pepper to taste. Serve hot.

Notes:

For a thicker stew, you can mix 2 tablespoons of flour with a bit of water and stir it into the stew during the last 30 minutes of cooking.
