grass-fed beef stew meat
cut into 1-inch cubes
1
large
onion
chopped
3
cloves
garlic
minced

cups
beef broth

carrots
sliced

medium
potatoes
peeled and cubed

tbsp
tomato paste
2
tbsp
olive oil
1
tsp
dried thyme
1
tsp
dried rosemary
to taste
salt and pepper
Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add the beef and cook until browned on all sides. Remove and set aside.
3. In the same pot, add the onion and garlic. Cook until softened.
4. Stir in the tomato paste, thyme, and rosemary. Cook for another minute.
5. Return the beef to the pot. Add the beef broth, carrots, and potatoes. Bring to a boil.
6. Reduce heat to low, cover, and simmer for 2 hours or until the beef is tender.
7. Season with salt and pepper to taste. Serve hot.
Notes:
For a thicker stew, you can mix 2 tablespoons of flour with a bit of water and stir it into the stew during the last 30 minutes of cooking.
