Ingredients:  

Main Ingredients

  • 4 pcs Potatoes peeled and diced
  • 4 pcs Tomatoes chopped
  • 1 pcs Onion chopped
  • 2 cloves Garlic minced
  • 2 tbsp Olive Oil
  • 4 cups Vegetable Broth
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 1 tsp Paprika

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and garlic, and sauté until translucent.
  • Add the diced potatoes and chopped tomatoes to the pot.
  • Pour in the vegetable broth and bring to a boil.
  • Reduce the heat and let it simmer for about 30-35 minutes, or until the potatoes are tender.
  • Season with salt, black pepper, and paprika. Stir well.
  • Serve hot and enjoy!

Notes:

This stew is perfect for a cozy dinner. Feel free to add other vegetables like carrots or peas.
