Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and garlic, and sauté until translucent.
Add the diced potatoes and chopped tomatoes to the pot.
Pour in the vegetable broth and bring to a boil.
Reduce the heat and let it simmer for about 30-35 minutes, or until the potatoes are tender.
Season with salt, black pepper, and paprika. Stir well.
Serve hot and enjoy!

This stew is perfect for a cozy dinner. Feel free to add other vegetables like carrots or peas.
