Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the beef stew meat and cook until browned on all sides.
3. Add the chopped onion and minced garlic, and cook until the onion is translucent.
4. Pour in the beef broth and bring to a boil.
5. Add the carrots, potatoes, salt, and black pepper. Reduce heat to low and simmer for 45 minutes, or until the vegetables are tender.
6. Serve hot and enjoy!

This stew is even better the next day, so feel free to make it ahead of time!
