Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the beef stew meat and cook until browned on all sides.
3. Add the chopped onion and minced garlic. Cook until the onion is translucent.
4. Pour in the beef broth and add the cumin. Stir well.
5. Add the sliced carrots and diced potatoes. Bring to a boil.
6. Reduce heat to low, cover, and simmer for about 2 hours, or until the meat and vegetables are tender.
7. Season with salt and black pepper to taste before serving.
Notes:
Feel free to add other vegetables like peas or green beans for extra flavor and nutrition.
