Ingredients:  

Main Ingredients

  • 2 lbs beef stew meat
  • 1 cup dried lima beans soaked overnight
  • 1 large onion chopped
  • 3 carrots sliced
  • 2 celery stalks sliced
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 1 can diced tomatoes
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • to taste salt and pepper

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat. Add the beef stew meat and brown on all sides.
  • 2. Add the chopped onion, carrots, celery, and garlic to the pot. Cook until the vegetables are softened.
  • 3. Pour in the beef broth and diced tomatoes. Add the dried thyme and rosemary. Stir well.
  • 4. Drain and rinse the soaked lima beans. Add them to the pot.
  • 5. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the beef and beans are tender.
  • 6. Season with salt and pepper to taste. Serve hot.

Notes:

This stew is perfect for a cozy dinner. Serve with crusty bread for a complete meal.
