Ingredients:

dried lima beans
soaked overnight

large onion

sliced

celery stalks

garlic

beef broth

diced tomatoes

dried thyme

tsp
dried rosemary
to taste
salt and pepper
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the beef stew meat and brown on all sides.
2. Add the chopped onion, carrots, celery, and garlic to the pot. Cook until the vegetables are softened.
3. Pour in the beef broth and diced tomatoes. Add the dried thyme and rosemary. Stir well.
4. Drain and rinse the soaked lima beans. Add them to the pot.
5. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the beef and beans are tender.
6. Season with salt and pepper to taste. Serve hot.
Notes:
This stew is perfect for a cozy dinner. Serve with crusty bread for a complete meal.
