red bell pepper, chopped

white fish fillets, cut into chunks

lemon, juiced
to taste
salt and pepper

fresh parsley, chopped
Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until softened.
Add minced garlic and chopped red bell pepper. Cook for another 5 minutes.
Stir in canned tomatoes, fish stock, dried oregano, and dried thyme. Bring to a simmer.
Add the fish chunks and simmer for 10-15 minutes, until the fish is cooked through.
Stir in lemon juice, salt, and pepper to taste.
Garnish with chopped fresh parsley before serving.
Notes:
Serve with crusty bread for a complete meal.
