Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 400 g canned tomatoes
  • 500 ml fish stock
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 600 g white fish fillets, cut into chunks
  • 1 lemon, juiced
  • to taste salt and pepper
  • 2 tbsp fresh parsley, chopped

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until softened.
  • Add minced garlic and chopped red bell pepper. Cook for another 5 minutes.
  • Stir in canned tomatoes, fish stock, dried oregano, and dried thyme. Bring to a simmer.
  • Add the fish chunks and simmer for 10-15 minutes, until the fish is cooked through.
  • Stir in lemon juice, salt, and pepper to taste.
  • Garnish with chopped fresh parsley before serving.

Notes:

Serve with crusty bread for a complete meal.
