Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups fish stock
  • 1 lb white fish fillets, cut into chunks
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 cup chopped fresh parsley

Instructions: 

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  • Add the minced garlic and cook for another minute.
  • Stir in the diced tomatoes and fish stock. Bring to a simmer.
  • Add the fish chunks, salt, black pepper, paprika, and thyme. Simmer gently until the fish is cooked through, about 10-15 minutes.
  • Stir in the chopped parsley just before serving.

Notes:

Serve with crusty bread for a complete meal.
