New England Beef Stew Recipe

Ingredients:  

Main Ingredients

  • 2 lbs Beef chuck, cut into cubes
  • 4 Carrots, sliced
  • 4 Potatoes, diced
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Beef broth
  • 2 tbsp Tomato paste
  • 1 tsp Thyme
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2 tbsp Olive oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the beef cubes and brown on all sides. Remove and set aside.
  • 3. In the same pot, add the onions and garlic. Cook until softened.
  • 4. Stir in the tomato paste and cook for another minute.
  • 5. Return the beef to the pot. Add the carrots, potatoes, beef broth, thyme, salt, and pepper.
  • 6. Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours, or until the beef is tender.
  • 7. Serve hot and enjoy!

Notes:

This stew tastes even better the next day. Store in the fridge and reheat gently.
