Beef chuck, cut into cubes

Carrots, sliced

Potatoes, diced

Onion, chopped

Garlic, minced

Beef broth

Tomato paste

Thyme

Olive oil
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the beef cubes and brown on all sides. Remove and set aside.
3. In the same pot, add the onions and garlic. Cook until softened.
4. Stir in the tomato paste and cook for another minute.
5. Return the beef to the pot. Add the carrots, potatoes, beef broth, thyme, salt, and pepper.
6. Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours, or until the beef is tender.
7. Serve hot and enjoy!
Notes:
This stew tastes even better the next day. Store in the fridge and reheat gently.
