Ingredients:  

Main Ingredients

  • 1 whole chicken cut into pieces
  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 1 bell pepper bell pepper chopped
  • 3 cloves garlic minced
  • 2 tomatoes tomatoes chopped
  • 1/4 cup tomato sauce
  • 1/4 cup water
  • 1 teaspoon oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup chopped cilantro

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chicken pieces and brown on all sides. Remove chicken and set aside.
  • In the same pot, add onion, bell pepper, and garlic. Sauté until softened.
  • Add tomatoes, tomato sauce, water, oregano, cumin, paprika, salt, and pepper. Stir well.
  • Return chicken to the pot. Cover and simmer for 30-35 minutes, until chicken is cooked through.
  • Stir in chopped cilantro before serving.
