Instructions:
Heat olive oil in a large pot over medium heat.
Add chicken pieces and brown on all sides. Remove chicken and set aside.
In the same pot, add onion, bell pepper, and garlic. Sauté until softened.
Add tomatoes, tomato sauce, water, oregano, cumin, paprika, salt, and pepper. Stir well.
Return chicken to the pot. Cover and simmer for 30-35 minutes, until chicken is cooked through.
Stir in chopped cilantro before serving.
