Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add the beef cubes and brown them on all sides.
3. Add chopped onions and minced garlic. Cook until onions are translucent.
4. Stir in the tomato paste, paprika, salt, and black pepper.
5. Pour in the beef broth and bring to a boil.
6. Add the carrots and potatoes. Reduce heat to low and simmer for about 45 minutes, or until the vegetables are tender.
7. Adjust seasoning if necessary and serve hot.
Notes:
This stew is even better the next day. Store leftovers in the fridge and reheat gently.
