Instructions:
1. Heat oil in a large pot over medium heat. Add the beef and cook until browned on all sides. Remove and set aside.
2. In the same pot, add the onion, garlic, and ginger. Cook until the onion is soft.
3. Stir in the curry powder, cumin, and coriander. Cook for another minute.
4. Return the beef to the pot. Add the coconut milk and beef broth. Bring to a boil, then reduce heat and simmer for 45 minutes.
5. Add the potatoes and carrots. Cook for another 30 minutes, or until the vegetables are tender.
6. Stir in the peas and cook for another 5 minutes. Season with salt and pepper to taste.
Notes:
Serve hot with rice or naan bread.
