Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat cut into cubes
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 tbsp Ginger minced
  • 2 tbsp Curry Powder
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1 can Coconut Milk 13.5 oz
  • 2 cups Beef Broth
  • 2 cups Potatoes peeled and diced
  • 1 cup Carrots sliced
  • 1 cup Peas frozen
  • to taste Salt
  • to taste Black Pepper

Instructions: 

  • 1. Heat oil in a large pot over medium heat. Add the beef and cook until browned on all sides. Remove and set aside.
  • 2. In the same pot, add the onion, garlic, and ginger. Cook until the onion is soft.
  • 3. Stir in the curry powder, cumin, and coriander. Cook for another minute.
  • 4. Return the beef to the pot. Add the coconut milk and beef broth. Bring to a boil, then reduce heat and simmer for 45 minutes.
  • 5. Add the potatoes and carrots. Cook for another 30 minutes, or until the vegetables are tender.
  • 6. Stir in the peas and cook for another 5 minutes. Season with salt and pepper to taste.

Notes:

Serve hot with rice or naan bread.
