Ingredients:  

Main Ingredients

  • 2 pork shanks
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions: 

  • Heat olive oil in a large pot over medium heat. Brown the pork shanks on all sides.
  • Remove the shanks and set aside. In the same pot, add onion, garlic, carrots, and celery. Cook until softened.
  • Stir in tomato paste, thyme, and bay leaf. Cook for another minute.
  • Add red wine to deglaze the pot, scraping up any browned bits.
  • Return the pork shanks to the pot. Add beef broth, salt, and pepper.
  • Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours, or until the meat is tender.

Notes:

Serve hot with crusty bread or mashed potatoes.
