Salt and pepper to taste

Instructions:
Heat olive oil in a large pot over medium heat. Brown the pork shanks on all sides.
Remove the shanks and set aside. In the same pot, add onion, garlic, carrots, and celery. Cook until softened.
Stir in tomato paste, thyme, and bay leaf. Cook for another minute.
Add red wine to deglaze the pot, scraping up any browned bits.
Return the pork shanks to the pot. Add beef broth, salt, and pepper.
Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours, or until the meat is tender.
Notes:
Serve hot with crusty bread or mashed potatoes.
