Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
3. Add the soaked adzuki beans, vegetable broth, and diced tomatoes to the pot.
4. Stir in the ground cumin, ground coriander, and salt.
5. Bring the mixture to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the beans are tender.
6. Adjust seasoning to taste and serve hot.
Notes:
This stew is great served with rice or crusty bread.
