Ingredients:  

Main Ingredients

  • 1 cup adzuki beans soaked overnight
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 cups vegetable broth
  • 1 cup diced tomatoes canned
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp salt to taste
  • 1 tbsp olive oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  • 3. Add the soaked adzuki beans, vegetable broth, and diced tomatoes to the pot.
  • 4. Stir in the ground cumin, ground coriander, and salt.
  • 5. Bring the mixture to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the beans are tender.
  • 6. Adjust seasoning to taste and serve hot.

Notes:

This stew is great served with rice or crusty bread.
