Ingredients:  

Main Ingredients

  • 500 g Mushrooms sliced
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 2 tbsp Olive Oil
  • 1 cup Vegetable Broth
  • 1 tbsp Soy Sauce
  • 1 tsp Thyme dried
  • 1 tsp Paprika
  • to taste Salt and Pepper

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until translucent.
  • Add minced garlic and cook for another minute.
  • Add sliced mushrooms and cook until they release their moisture and start to brown.
  • Pour in vegetable broth, soy sauce, thyme, and paprika. Stir well.
  • Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Season with salt and pepper to taste. Serve hot.

Notes:

Great served over rice or with crusty bread.
